The grapes for this wine, are from vineyards located in the Central Valley; in poor soils of river beds. With hot, dry summers, they are irrigated by a ‘drip system’, by controlling the water supply; wine producers obtain grapes with slow ripeness and fresh flavors! This wine comes from the first juice! Only released, after pressing the grapes; and depositing them in the vats at Cold fermentation at 14-15 ° C.
