The grapes for this wine, are from vineyards located in the Central Valley in poor soils of river beds. With hot, dry summers, they are irrigated by a ‘drip system’, by controlling the water supply, wine producers obtain grapes with slow ripeness and fresh flavours. This wine comes from the first juice. Only released, after pressing the grapes and depositing them in the vats at Cold fermentation at 14-15 ° C.
